Cheesy Meatless (try it!) Enchiladas

I have to share this recipe!  I did a mini meal prep yesterday so that I’d stop indulging in things I shouldn’t eat!  I know, I fell off the wagon a bit, but pregnancy is tough.  I’ll make things and I just don’t want to eat them.  It’s hard to prep when what sounds amazing one day, repulses you the next!  Anyways, this is so simple and my husband even loved them….they’re meatless enchiladas, filled with shredded zucchini, scallions, and I added freshly chopped cilantro.  I use the 80 calorie tortillas that you can find in the refrigerated section of the grocery store.  Anyways, being pregnant, I always love Mexican so I figured it was a safe bet preparing these and keeping them in the fridge for lunches.  Add a bean salad and it’s a great meal, low in carbs, high in fiber and protein.

A Strawberry Sorbet with a Secret

Remember to check for added sugars or sodium when buying frozen vegetables or fruit.  I didn’t have frozen strawberries so I threw a box of them in the freezer.  This is a great alternative if you are buying in bulk as I do.  It prevents rotting fruits and veggies and saves you from having to buy pre-packaged.  My kids LOVED this sorbet, as did I and you know what I didn’t have while eating this?  GUILT!  Isn’t it fantastic to indulge while rewarding your body?

The Kitchen Sink

This is delicious and full of so many various foods, which is why I titled it “the kitchen sink.”  It’s slightly higher in calories, due to the avocado, but is packed with omega 3’s, magnesium, potassium, vitamins A, K, C, B2, B3, B6, antioxidants, and even folate, for all of you expecting moms out there!  If you are pregnant or nursing, don’t forget about pears.  They’re sweet and delicious and are packed with folate, high in fiber, and rich in vitamins and minerals.  They’re perfect to add to any smoothie, as their taste is not too citrusy.

Low cal, high vitamin smoothie

This smoothie is so simple.  There’s really not much to it.  I made it the night before and enjoyed it for breakfast.  My husband added it to his breakfast, as he’s a bigger eater than I am in the morning.  It is packed full of antioxidants, your full dose of daily vitamin A and K, and half your requirement of magnesium.  Enjoy:)
