Cheesy Meatless (try it!) Enchiladas

I have to share this recipe!  I did a mini meal prep yesterday so that I’d stop indulging in things I shouldn’t eat!  I know, I fell off the wagon a bit, but pregnancy is tough.  I’ll make things and I just don’t want to eat them.  It’s hard to prep when what sounds amazing one day, repulses you the next!  Anyways, this is so simple and my husband even loved them….they’re meatless enchiladas, filled with shredded zucchini, scallions, and I added freshly chopped cilantro.  I use the 80 calorie tortillas that you can find in the refrigerated section of the grocery store.  Anyways, being pregnant, I always love Mexican so I figured it was a safe bet preparing these and keeping them in the fridge for lunches.  Add a bean salad and it’s a great meal, low in carbs, high in fiber and protein.

You could easily add shredded chicken breast or whatever your favorite enchilada filling is, but try it this way first!  The zucchini is so good!

I love, especially if you are following weight watchers.  She has amazing crock pot recipes that my  entire family enjoys, and you don’t have to be advanced in the kitchen to recreate the majority of her recipes.
