Low cal, high vitamin smoothie

This smoothie is so simple.  There’s really not much to it.  I made it the night before and enjoyed it for breakfast.  My husband added it to his breakfast, as he’s a bigger eater than I am in the morning.  It is packed full of antioxidants, your full dose of daily vitamin A and K, and half your requirement of magnesium.  Enjoy:)


 

  • 2 cups of spinach
  • 2 cups blueberries
  • 1/2 banana
  • 1/2 cup water
  • 1/2 cup ice

 

Begin with Vitamix on variable, speed 1, then quickly increase to 10, then to high.  Blend for 30-45 seconds or until desired consistency.  This makes 3-4 cups, so enjoy what you want and refrigerate extras.
